Eating plant-based is so fun once you learn to play with and enjoy your food! Since changing my lifestyle to a more whole food, plant-based approach, I have been falling in love with nutrition more and more every single day. The spices, the colours, the flavours... Ugh! Getting excited just talking (in this case, writing) about it.
I wanted to share with you this new recipe that I am currently absolutely obsessed with: The Chickpea falafel dish
To prepare the falafel, all you will need is some chickpeas and spices Yup...Just that!
Spices:
Garlic
Onions
Parsley
Peppers
Curry
Sea salt
Let the chickpeas soak overnight in room temperature water. I leave mine for about 10 hours. The next morning, put your soaked chickpeas in a blender with some water and all the spices. Blend this smooth. At first, your paste will be very liquid and you won't really know what to do with it. Do not panic, that is normal. Put the paste in a bowl and let it sit in the fridge for an hour or 2.
Cook the paste on the oven in a non stick pan. No oil needed. Add some spices to taste as you cook it. once the paste is cooked and firm, you will be able to shape it into falafel balls. Put your falafels in the oven and let them bake for about 15 minutes until desired crunshiness is attained.

For this lunch, I used 2 sides.
1) Steamed brocoli that I then stired on the oven only with coconut aminos and onions , no oil
2) Quinoa

Raw salad
Pita and Hummus

This meal is light, nutritious (packed with plant protein and fiber) and very easy to make.
